Coconut fudge pops

On days full of uncertainty and worry for the times ahead, a little chocolate can't hurt.

Nothing beats a creamy, chocolaty treat on a hot summer day.

Dark cocoa contains antioxidants, and coconut milk is full of healthy fats and is a great alternative for those who avoid dairy. Read labels and choose a coconut milk with little to no additives.

 Ingredients

  • 1 can (400 mL) full-fat coconut milk
  • ¼ cup dark cocoa powder
  • 3 tbsp. honey (or sweetener of your choice)
  • 1 tsp. vanilla extract
  • Dash of sea salt

 Preparation

Add all the ingredients to a blender and combine until smooth. Allow to rest and blend again to fully incorporate the ingredients. Pour the mixture into a popsicle mould and freeze. If you don’t have a mould, pour the mixture into small paper cups, ice cube trays or mini yogourt cups and insert a popsicle stick.

To serve, run the mould under warm water to loosen.
